Ingredients:
- 8 oz (225g) spaghetti or linguine
- 1 lb (450g) large shrimp, peeled and deveined
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1/4 cup (60ml) chicken or vegetable broth
- 1/4 cup (60ml) dry white wine (optional)
- 2 tablespoons butter
- Salt and pepper to taste
- Crushed red pepper flakes (optional)
- Fresh parsley, chopped, for garnish
- Grated Parmesan cheese, for serving
- Cook the pasta according to package instructions until al dente. Drain and set aside, reserving some pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
- Add the shrimp to the skillet and season with salt, pepper, and red pepper flakes if using. Cook the shrimp until pink and cooked through, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the chicken or vegetable broth and white wine (if using), scraping up any browned bits from the bottom of the pan.
- Reduce the heat to low and add the cooked pasta to the skillet. Toss to coat the pasta in the sauce.
- Add the butter to the skillet and stir until melted and combined with the pasta.
- Return the cooked shrimp to the skillet and toss everything together until heated through.
- If the sauce is too thick, you can add some reserved pasta water to loosen it up.
- Taste and adjust seasoning if needed.
- Serve the garlic shrimp pasta hot, garnished with chopped parsley and grated Parmesan cheese.
