I've recently tried making gazpacho, and it's such a refreshing and easy dish, perfect for hot days. The flavors are bright and fresh, and it feels like you're eating a garden in a bowl. Here's how to make it:
Ingredients:
- 6 ripe tomatoes
- 1 cucumber, peeled and chopped
- 1 red bell pepper, seeded and chopped
- 1 small red onion, chopped
- 2 garlic cloves
- 3 cups tomato juice
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
- Optional: a few dashes of hot sauce
Instructions:
- Prep the veggies: Start by chopping the tomatoes, cucumber, bell pepper, and red onion into chunks.
- Blend: In a blender or food processor, combine the tomatoes, cucumber, bell pepper, red onion, and garlic. Blend until smooth.
- Mix: Pour the blended veggies into a large bowl. Add the tomato juice, olive oil, red wine vinegar, salt, and pepper. Stir well.
- Chill: Cover the bowl and refrigerate for at least 2 hours, or until the gazpacho is well chilled. The flavors will meld together nicely as it chills.
- Serve: Give it a good stir before serving. Pour into bowls and, if you like, add a dash of hot sauce for an extra kick. Garnish with extra chopped veggies or fresh herbs if desired.
