- 6 ripe tomatoes, chopped
- 1 cucumber, peeled and chopped
- 1 bell pepper (red or green), chopped
- 1 small red onion, chopped
- 2 cloves garlic, minced
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper, or to taste
- Optional garnishes: chopped fresh herbs (such as parsley or basil), croutons, diced avocado
- Prepare Vegetables: In a blender or food processor, combine the chopped tomatoes, cucumber, bell pepper, red onion, and minced garlic.
- Blend: Blend the vegetables until smooth. You may need to work in batches depending on the size of your blender or food processor.
- Season: Add the olive oil, red wine vinegar, salt, and black pepper to the blended mixture. Blend again until everything is well combined and smooth.
- Chill: Transfer the gazpacho to a large bowl or pitcher and refrigerate for at least 1-2 hours to chill and allow the flavors to meld.
