- Season the sliced beef with salt, pepper, and a splash of sesame oil. Stir-fry in a pan until cooked through. Set aside.
- Lay a sheet of dried seaweed on a bamboo sushi mat or a clean surface.
- Spread a thin layer of seasoned rice evenly over the seaweed, leaving a small border along one edge.
- Arrange the cooked beef, carrot, cucumber, pickled radish, and egg omelet strips in a line across the center of the rice.
- Using the bamboo mat, roll the seaweed and rice tightly around the filling, pressing gently to seal the edges.
- Repeat with the remaining ingredients to make three more rolls.
- Slice each roll into bite-sized pieces using a sharp knife.
- Serve the Gimbap Kimbap with a dipping sauce made from soy sauce, rice vinegar, and a sprinkle of sesame seeds.
