**Ingredients:**
- 1 medium bitter melon, sliced and seeds removed
- 1 tbsp salt
- 1 tbsp vegetable oil
- 1/2 cup sliced pork (or tofu for a vegetarian option)
- 1/2 cup diced onions
- 1/2 cup sliced bell peppers
- 2 cloves garlic, minced
- 2 large eggs, beaten
- 2 tbsp soy sauce
- 1 tbsp mirin (optional)
- Salt and pepper to taste
**Instructions:**
1. Toss the bitter melon slices with salt and let sit for 15 minutes. Rinse and pat dry.
2. Heat the oil in a large skillet or wok over medium-high heat.
3. Add the pork (or tofu) and cook until browned and cooked through.
4. Add the onions, bell peppers, and garlic, and cook until softened.
5. Stir in the bitter melon and cook for about 5 minutes.
6. Push everything to one side of the skillet, pour the beaten eggs into the empty space, and scramble until cooked.
7. Mix everything together and stir in the soy sauce and mirin.
8. Season with salt and pepper to taste.
