Grandma's Favorite Puffy Dutch Baby

Ingredients:
  • 3 large eggs
  • 2/3 cup milk
  • 2/3 cup all-purpose flour
  • 1 tbsp white sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 4 tbsp butter
Instructions:
  1. Preheat your oven to 425°F. Place a 9 or 10-inch oven-safe skillet or baking dish in the oven to get screaming hot while you make the batter.
  2. In a blender, combine the eggs, milk, flour, sugar, vanilla and salt. Blend until a smooth, pourable batter forms, about 30 seconds to 1 minute.
  3. Carefully remove the hot skillet/dish from the oven and add the butter. It should sizzle and melt right away.
  4. Pour the batter directly into the hot butter and immediately return the pan to the oven.
  5. Bake for 18-22 minutes until the dutch baby is puffed up and deeply golden around the edges.
  6. Remove from oven and admire that glorious puffed beauty! It will quickly deflate, but that's okay.
  7. Cut it into wedges and top with grandma's favorite toppings - powdered sugar, fresh fruit, syrup, you name it!
