- 4-6 garlic cloves, peeled

- Preheat the oven to 375°F (190°C).
- Zest and juice one lemon. In a small bowl, combine the lemon zest, lemon juice, minced garlic, chopped oregano, chopped rosemary, chopped thyme, and olive oil. Season with salt and pepper to taste.
- Rinse the chicken under cold water and pat dry with paper towels. Place the chicken in a roasting pan or baking dish.
- Carefully loosen the skin of the chicken by gently running your fingers between the skin and the meat, being careful not to tear the skin.
- Rub the lemon herb mixture all over the chicken, including under the skin and inside the cavity.

- Roast the chicken in the preheated oven for 1 hour and 15 minutes to 1 hour and 30 minutes, or until the juices run clear and the internal temperature reaches 165°F (75°C) when measured with a meat thermometer inserted into the thickest part of the thigh.
