  • 2 cloves garlic, minced
  • 1 pound fresh spinach, chopped
  • 1 cup crumbled feta cheese
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh parsley
  • Salt and pepper, to taste
  • 1/2 cup melted butter, for brushing
Instructions:

    • In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until softened and fragrant.
    • Add chopped spinach to the skillet and cook until wilted, stirring occasionally.
    • Remove the skillet from heat and transfer the spinach mixture to a large bowl.
    • Allow the spinach mixture to cool slightly, then stir in crumbled feta cheese, chopped dill, chopped parsley, salt, and pepper. Mix well to combine.
  2. Assemble the Spanakopita:
    • Preheat the oven to 350°F (175°C). Grease a baking dish with olive oil or non-stick cooking spray.
    • Unroll the thawed phyllo dough and cover it with a damp kitchen towel to prevent drying out.
    • Place one sheet of phyllo dough in the prepared baking dish, allowing the edges to hang over the sides. Brush the phyllo sheet with melted butter.
    • Continue layering the phyllo sheets, brushing each sheet with melted butter as you go, until you have used half of the phyllo dough.
  3. Add the Filling:

  4. Finish Assembling:
