Hey everyone! I just tried this super refreshing Greek Marinated Chickpea Salad yesterday, and it was so good! It’s the perfect mix of flavors and textures, and it’s super easy to whip up. Plus, it’s healthy and packed with protein from the chickpeas! I can’t wait to share it with you.

Ingredients:
- 2 cans (14 oz/400g each) chickpeas, well drained
- Dressing/Marinade:
- 2 tablespoons red wine vinegar
- 5 tablespoons extra virgin olive oil
- 1 garlic clove, minced
- 2 teaspoons dried oregano
- ½ teaspoon Dijon mustard (or any smooth mustard)
- ¾ teaspoon salt
- ¾ teaspoon pepper
- Quick Pickled Onion (optional):
- ½ red onion, finely sliced
- ½ cup red wine vinegar
- 1 teaspoon white sugar
- ½ teaspoon salt
- Salad:
- 8 oz (250g) cherry or grape tomatoes, halved (or 2 regular tomatoes)
- 3 cups packed spinach, sliced thick
- 3 oz (100g) feta cheese
- ¾ cup chargrilled peppers, drained and sliced (optional)
- Start by shaking up the dressing ingredients in a jar until well mixed.
- Put the chickpeas in a microwave-safe bowl and toss them with half of the dressing. Microwave for about 1.5 minutes, stirring every 30 seconds until they're warmed up. Let them sit for 20 minutes to soak up all that flavor.
- For the quick pickled onion, mix the onion slices with the vinegar, sugar, and salt in a bowl. Set it aside for 30 minutes until the onions soften. If you're in a hurry, just microwave it for 2 minutes, cool for 10, and you’re good to go!
- Now, grab a big bowl and place the sliced spinach at the bottom. Add the marinated chickpeas (along with any dressing left in the bowl), halved tomatoes, pickled onions, and chargrilled peppers if you’re using them.
- Drizzle the rest of the dressing over everything and toss it all together. Transfer it to a serving plate, crumble the feta on top, and enjoy!
