Green Vegetable Salad Recipe 🥗

Hey everyone! Just wanted to share my go-to green veggie salad recipe. It’s super fresh, crunchy, and perfect as a side or a light meal. Hope you guys give it a try and let me know your tweaks!


Ingredients:

  • 4 cups mixed greens (spinach, arugula, kale—whatever you like!)
  • 1 cup chopped cucumber
  • 1 cup steamed broccoli florets (cooled)
  • 1/2 cup thinly sliced green bell pepper
  • 1/4 cup chopped green onions
  • 1 avocado, diced
  • 1/4 cup toasted sunflower seeds or pumpkin seeds
  • 1/4 cup crumbled feta cheese (optional but so good)
For the Dressing:

  • 3 tbsp olive oil
  • 1 tbsp lemon juice (or lime if you like it zesty)
  • 1 tsp Dijon mustard
  • 1 tsp honey (or maple syrup for a vegan option)
  • Salt and pepper to taste

Steps:

  1. Toss all the salad ingredients in a big bowl—don’t be shy with the greens!
  2. Whisk together the dressing in a small bowl or shake it up in a jar (so satisfying!).
  3. Pour the dressing over the salad and give it a gentle toss to coat everything evenly.
  4. Sprinkle with sunflower seeds and feta before serving.
