- 4 cups mixed greens (spinach, arugula, kale—whatever you like!)
- 1 cup chopped cucumber
- 1 cup steamed broccoli florets (cooled)
- 1/2 cup thinly sliced green bell pepper
- 1/4 cup chopped green onions
- 1 avocado, diced
- 1/4 cup toasted sunflower seeds or pumpkin seeds
- 1/4 cup crumbled feta cheese (optional but so good)
- 3 tbsp olive oil
- 1 tbsp lemon juice (or lime if you like it zesty)
- 1 tsp Dijon mustard
- 1 tsp honey (or maple syrup for a vegan option)
- Salt and pepper to taste
Steps:
- Toss all the salad ingredients in a big bowl—don’t be shy with the greens!
- Whisk together the dressing in a small bowl or shake it up in a jar (so satisfying!).
- Pour the dressing over the salad and give it a gentle toss to coat everything evenly.
- Sprinkle with sunflower seeds and feta before serving.
