Ingredients:
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper to taste
- 4 cups mixed salad greens (such as spinach, arugula, and romaine)
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1 bell pepper, sliced
- 1 cup strawberries, sliced
- 1/2 cup blueberries
- 1/4 cup feta cheese, crumbled
- 1/4 cup sliced almonds (optional)
- Balsamic vinaigrette dressing (homemade or store-bought)
- Preheat your grill to medium-high heat.
- Brush the chicken breasts with olive oil and season generously with salt and pepper.
- Grill the chicken breasts for 6-8 minutes per side, or until they are cooked through and no longer pink in the center. Remove from the grill and let them rest for a few minutes before slicing.
- In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber slices, bell pepper slices, strawberries, and blueberries.
- Add the sliced grilled chicken on top of the salad.
- Sprinkle the crumbled feta cheese and sliced almonds over the salad.
- Drizzle with balsamic vinaigrette dressing, to taste, and toss everything together until well combined.
- Serve the grilled chicken and fruit salad immediately, and enjoy!
