Summer is all about firing up the grill and enjoying delicious outdoor meals. One of my absolute favorite summer recipes is these Grilled Shrimp and Pineapple Skewers. They're bursting with flavor and are perfect for backyard barbecues or poolside gatherings!

- 1 pound large shrimp, peeled and deveined
- 1 pineapple, peeled, cored, and cut into chunks
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon chili powder
- Salt and pepper, to taste
- Wooden or metal skewers
- If using wooden skewers, soak them in water for at least 30 minutes to prevent them from burning on the grill.
- In a small bowl, whisk together the olive oil, minced garlic, paprika, chili powder, salt, and pepper to make the marinade.
- Thread the shrimp and pineapple chunks onto the skewers, alternating between the two.
- Place the skewers in a shallow dish and brush the marinade over them, ensuring they are evenly coated. Allow them to marinate for at least 15 minutes, or up to 30 minutes if time allows.
- Preheat your grill to medium-high heat.
- Once the grill is hot, place the skewers directly onto the grill grates.
- Grill the skewers for 2-3 minutes on each side, or until the shrimp are pink and opaque and the pineapple has caramelized slightly.
- Remove the skewers from the grill and transfer them to a serving platter.
- Serve the grilled shrimp and pineapple skewers hot, garnished with chopped fresh cilantro or a squeeze of lime juice if desired.
