- 4 halibut fillets (6 ounces each)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/4 cup chicken broth or white wine
- Juice of 1 lemon
- 2 tablespoons unsalted butter
- Fresh parsley for garnish (optional)
- Season the halibut fillets generously with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Once hot, add the halibut fillets to the skillet.
- Cook the halibut fillets for 3-4 minutes on each side, or until they are golden brown and cooked through. The fish should easily flake with a fork when done. Transfer the cooked halibut to a plate and cover with foil to keep warm.
- In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
- Pour in the chicken broth or white wine and lemon juice, scraping up any browned bits from the bottom of the skillet.
- Let the liquid simmer and reduce by half, about 2-3 minutes.
- Reduce the heat to low and add the unsalted butter to the skillet. Stir until the butter is melted and the sauce is smooth and slightly thickened.
- Return the cooked halibut fillets to the skillet and spoon the lemon butter sauce over them.
- Let the halibut warm through in the sauce for a minute or two.
- Garnish the Halibut Delight with Lemon Butter Sauce with fresh parsley if desired, and serve hot.
