Ingredients:


  • 8 ounces uncooked no-yolk egg noodles (1/2-inch wide)
  • 6 tablespoons salted butter, divided
  • 6 ounces kielbasa, cut into 1-inch pieces
  • 1 large onion, chopped (about 2 cups)
  • 2 cloves garlic, minced
  • 1 head green cabbage, cored and cut into 1 & 1/2-inch pieces
  • 1 teaspoon spicy brown or Dijon mustard (optional)
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
Instructions:

  1. Bring a large pot of salted water to a boil. Cook the egg noodles until al dente according to package instructions. Drain well and set aside.
  2. In a deep nonstick skillet, melt 2 tablespoons of butter over medium-high heat. Add the kielbasa and sauté for about 3 minutes until browned and crispy. Transfer the kielbasa to a plate using a slotted spoon and set aside.
  3. In the same skillet with the rendered kielbasa fat, add the onions, garlic, cabbage, and remaining 2 tablespoons of butter. Reduce the heat to medium and sauté, stirring frequently, until the cabbage is tender, about 8 minutes, adjusting cooking time for desired tenderness.
  4. Add the cooked noodles and kielbasa back to the skillet with the cabbage mixture. Toss to combine and heat through.
  5. Stir in the remaining 2 tablespoons of butter, mustard (if using), and season with salt and pepper.
  6. Serve immediately and enjoy!
