- 4 boneless, skinless chicken breasts
- 1 cup pineapple juice
- 1/4 cup soy sauce
- 1/4 cup ketchup
- 2 tablespoons brown sugar
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated or minced
- 1/4 teaspoon black pepper
- 1 can (8 ounces) pineapple slices, drained
- Optional: sliced green onions and sesame seeds for garnish
- In a bowl, whisk together pineapple juice, soy sauce, ketchup, brown sugar, garlic, ginger, and black pepper.
- Place chicken breasts in a large resealable plastic bag or shallow dish. Pour half of the marinade over the chicken, reserving the other half for later. Seal or cover and refrigerate for at least 1 hour (or up to 4 hours), turning occasionally.
- Preheat grill to medium-high heat or preheat oven to 400ยฐF (200ยฐC).
- Remove chicken from marinade and discard marinade from the bag or dish.
- Grill chicken for 6-8 minutes per side, or until fully cooked (internal temperature should reach 165ยฐF or 74ยฐC). If baking, place chicken in a baking dish and bake for 25-30 minutes, or until done.
- During the last few minutes of grilling or baking, grill or broil pineapple slices until lightly caramelized.
- Serve grilled chicken with grilled pineapple slices on top. Drizzle with reserved marinade.
