Hey everyone, I want to introduce you to a mouthwatering delight: Hawaiian Chicken! ๐Ÿ๐Ÿ— This recipe blends juicy chicken with the sweetness of pineapple and a hint of island flavors, creating a taste of tropical paradise right at your dinner table. Let's dive into this delicious dish!

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/4 cup soy sauce
  • 1/4 cup ketchup
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated or minced
  • 1/4 teaspoon black pepper
  • 1 can (8 ounces) pineapple slices, drained
  • Optional: sliced green onions and sesame seeds for garnish
Instructions:
  1. In a bowl, whisk together pineapple juice, soy sauce, ketchup, brown sugar, garlic, ginger, and black pepper.
  2. Place chicken breasts in a large resealable plastic bag or shallow dish. Pour half of the marinade over the chicken, reserving the other half for later. Seal or cover and refrigerate for at least 1 hour (or up to 4 hours), turning occasionally.
  3. Preheat grill to medium-high heat or preheat oven to 400ยฐF (200ยฐC).
  4. Remove chicken from marinade and discard marinade from the bag or dish.
  5. Grill chicken for 6-8 minutes per side, or until fully cooked (internal temperature should reach 165ยฐF or 74ยฐC). If baking, place chicken in a baking dish and bake for 25-30 minutes, or until done.
  6. During the last few minutes of grilling or baking, grill or broil pineapple slices until lightly caramelized.
  7. Serve grilled chicken with grilled pineapple slices on top. Drizzle with reserved marinade.
  8. Garnish with sliced green onions and sesame seeds, if desired. Enjoy your Hawaiian Chicken!
