Made this healthy vegetable panini for lunch, and it was so satisfying! Crispy, cheesy, and packed with veggies.

Ingredients:
- 2 slices whole grain or sourdough bread
- 1/4 cup hummus or pesto (your choice)
- 1/2 zucchini, thinly sliced
- 1/2 red bell pepper, sliced
- 1/4 red onion, thinly sliced
- A handful of fresh spinach
- 1/4 cup shredded mozzarella or crumbled feta cheese
- Olive oil for brushing
- Spread hummus or pesto on one side of each bread slice.
- Layer the zucchini, red bell pepper, red onion, spinach, and cheese on one slice.
- Top with the other slice of bread, hummus/pesto side down.
- Brush the outside of the bread with olive oil.
- Grill in a panini press or on a skillet over medium heat until the bread is golden and crispy, and the cheese is melted (about 3-4 minutes per side).
