Healthy Vegetable Panini Recipe

Made this healthy vegetable panini for lunch, and it was so satisfying! Crispy, cheesy, and packed with veggies.

Ingredients:

  • 2 slices whole grain or sourdough bread
  • 1/4 cup hummus or pesto (your choice)
  • 1/2 zucchini, thinly sliced
  • 1/2 red bell pepper, sliced
  • 1/4 red onion, thinly sliced
  • A handful of fresh spinach
  • 1/4 cup shredded mozzarella or crumbled feta cheese
  • Olive oil for brushing
Instructions:

  1. Spread hummus or pesto on one side of each bread slice.
  2. Layer the zucchini, red bell pepper, red onion, spinach, and cheese on one slice.
  3. Top with the other slice of bread, hummus/pesto side down.
  4. Brush the outside of the bread with olive oil.
  5. Grill in a panini press or on a skillet over medium heat until the bread is golden and crispy, and the cheese is melted (about 3-4 minutes per side).
This panini is so fresh and loaded with flavor—definitely making it again!
