Ingredients:
  • 2 salmon fillets
  • 1 cup quinoa
  • 2 cups water or low-sodium vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 lemon, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup chopped broccoli
  • 1 cup baby spinach
  • Fresh parsley for garnish (optional)


Instructions:
  1. Start by rinsing the quinoa under cold water to remove any bitterness. In a medium saucepan, bring 2 cups of water or low-sodium vegetable broth to a boil. Add the rinsed quinoa, reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the quinoa is cooked and the liquid is absorbed. Fluff with a fork and set aside.
  2. While the quinoa is cooking, preheat your grill or grill pan to medium-high heat. Brush the salmon fillets with olive oil and season them with garlic powder, paprika, salt, and pepper.
  3. Place the salmon fillets on the grill, skin side down, and grill for about 4-5 minutes per side, or until the salmon is cooked through and has nice grill marks. During the last minute of grilling, place a few lemon slices on top of the salmon for added flavor.
  4. In a large skillet, heat a small amount of olive oil over medium heat. Add the cherry tomatoes and chopped broccoli, and sauté for about 5 minutes, or until the vegetables are tender. Add the baby spinach and cook for another 2 minutes, or until the spinach is wilted.
  5. To serve, divide the cooked quinoa evenly between two plates. Top each plate with a grilled salmon fillet and a generous portion of the sautéed vegetables.
  6. Garnish with fresh parsley and additional lemon slices, if desired.
