Ingredients:
- 1 ½ pounds beef stew meat, cubed
- 2 tablespoons all-purpose flour
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 4 carrots, peeled and sliced
- 4 potatoes, peeled and diced
- 2 celery stalks, sliced
- 4 cups beef broth
- 1 cup red wine (optional)
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 cup frozen peas
- Start by seasoning the cubed beef with salt and pepper, then coat it in flour.
- Heat olive oil in a large pot over medium-high heat. Add the beef cubes and cook until browned on all sides. Remove the beef from the pot and set it aside.
- In the same pot, add diced onions and minced garlic. Cook until softened and fragrant.
- Return the browned beef to the pot, along with sliced carrots, diced potatoes, and sliced celery.
- Pour in beef broth and red wine (if using), then add bay leaves, dried thyme, and dried rosemary.
- Bring the stew to a boil, then reduce the heat to low and let it simmer for about 1 ½ to 2 hours, or until the beef is tender and the vegetables are cooked through.
- About 10 minutes before serving, stir in frozen peas and let them heat through.
- Taste and adjust seasoning with salt and pepper if needed.
- Serve hot, garnished with fresh parsley if desired.
