- 1 cup cooked and mashed butternut squash
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- Optional: Powdered sugar for dusting
- Preheat your oven to 350°F (175°C) and grease a donut pan with cooking spray.
- In a large mixing bowl, combine the mashed butternut squash, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix until well combined.
- In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
- Spoon the batter into the prepared donut pan, filling each cavity about 2/3 full.
- Bake the butternut donuts in the preheated oven for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the donuts from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
- Once the donuts are completely cooled, dust them with powdered sugar, if desired.
