I am so excited to share the recipe to my comfort food. Chicken Noodle Soup has been a part of my life for as long as I can remember. I hope you try this recipe and enjoy!

- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 cloves garlic, minced
- 8 cups chicken broth
- 2 cups cooked chicken, shredded or diced
- 2 cups uncooked egg noodles
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
- In a large pot, heat olive oil over medium heat. Add diced onion, sliced carrots, and sliced celery. Cook until vegetables are softened, about 5-7 minutes.
- Add minced garlic and cook for an additional 1 minute until fragrant.
- Pour in chicken broth and bring to a simmer.
- Stir in cooked chicken, uncooked egg noodles, and dried thyme. Cook until noodles are tender, about 8-10 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley if desired.
