Homemade Chicken Noodle Soup

I am so excited to share the recipe to my comfort food. Chicken Noodle Soup has been a part of my life for as long as I can remember. I hope you try this recipe and enjoy!

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded or diced
  • 2 cups uncooked egg noodles
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)
Instructions:

  1. In a large pot, heat olive oil over medium heat. Add diced onion, sliced carrots, and sliced celery. Cook until vegetables are softened, about 5-7 minutes.
  2. Add minced garlic and cook for an additional 1 minute until fragrant.
  3. Pour in chicken broth and bring to a simmer.
  4. Stir in cooked chicken, uncooked egg noodles, and dried thyme. Cook until noodles are tender, about 8-10 minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh parsley if desired.
Feel free to customize this recipe by adding other vegetables like peas or corn. You can also use rotisserie chicken or leftover cooked chicken if you have any. This soup freezes also well, so you can make a big batch and save some for later, which is my favorite part!
 
Looks delicious! 😋 By the way, my big tip for anyone trying to make noodle soup is to cook the noodles separately and then add them to the soup. Noodles tend to get soggy if they sit in the soup pot. This tip applies unless it's a single-serving type of dish. If there are any leftover noodles, I usually just throw them in a skillet, mix in an egg – super good and quick! 🍳
 
I always make a big batch because it's the kind of dish that gets better with time. Plus, it's like a one-pot meal with protein, veggies, and carbs all in one.
