Hey everyone! I wanted to share this recipe for some delicious homemade Fruit Nut Bars Iā€™ve been loving lately. Theyā€™re perfect for a quick snack or even a light breakfast on the go. Ingredients:

  • 1 Ā½ cups mixed nuts (I like almonds, cashews, and walnuts)
  • 1 cup dried fruit (apricots, cranberries, or raisins work great)
  • 1 Ā½ cups rolled oats
  • Ā¼ cup honey or maple syrup
  • Ā¼ cup almond butter (or peanut butter if you prefer!)
  • 1 tsp vanilla extract
  • Ā½ tsp cinnamon
  • Pinch of salt
  • Optional: chocolate chips or coconut flakes for extra yum! šŸ«šŸ„„
Instructions:

  1. Preheat your oven to 350Ā°F (175Ā°C). Line a baking dish with parchment paper.
  2. In a large bowl, mix together the nuts, dried fruit, and oats.
  3. In a small saucepan, heat the honey, almond butter, vanilla extract, cinnamon, and salt over low heat. Stir until smooth.
  4. Pour the warm mixture over the dry ingredients and stir until everything is well-coated.
  5. Press the mixture firmly into your prepared baking dish (press down hard so it sticks together).
  6. Bake for about 15-20 minutes or until the edges turn golden brown.
  7. Let it cool completely before cutting into bars.
