Ingredients:

  • 2 ripe mangoes, peeled and diced
  • 1 cup plain Greek yogurt (low-fat or non-fat)
  • 2 tablespoons honey or maple syrup (adjust to taste)
  • 1 teaspoon vanilla extract
  • Optional: fresh mint leaves, for garnish
Instructions:

  1. Place the diced mangoes in a blender or food processor. Blend until smooth and creamy.
  2. In a mixing bowl, combine the pureed mangoes, Greek yogurt, honey or maple syrup, and vanilla extract. Stir until well combined and smooth.
  3. Taste the mixture and adjust the sweetness level by adding more honey or maple syrup if desired.
  4. Pour the mango mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
  5. If you don't have an ice cream maker, you can pour the mixture into a shallow dish and place it in the freezer. Every 30 minutes, remove the dish from the freezer and use a fork to stir and break up any ice crystals until the mixture is uniformly frozen and creamy.
  6. Once the ice cream reaches your desired consistency, transfer it to an airtight container and freeze for at least 2-3 hours, or until firm.
  7. When ready to serve, scoop the Homemade Skinny Fresh Mango Ice Cream into bowls or cones.
  8. Garnish with fresh mint leaves for a pop of color and extra freshness, if desired.
  9. Enjoy the light, refreshing, and tropical flavor of this Skinny Fresh Mango Ice Cream—a guilt-free treat that's perfect for satisfying your sweet cravings on a hot summer day!
You can top it with toasted coconut flakes or chopped nuts for added texture and flavor. Enjoy!
