I recently made Honduran Baleadas, and they were a delightful discovery! These delicious tortillas filled with creamy refried beans, cheese, and other tasty toppings are perfect for a quick and satisfying meal. Here’s how you can bring a taste of Honduras to your own kitchen with this Baleadas recipe:
Ingredients:
For the Tortillas:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup vegetable oil
- 3/4 cup warm water
For the Filling:
- 1 can (15 ounces) refried red beans or black beans
- 1/2 cup crumbled queso fresco or feta cheese
- 1/4 cup sour cream or Honduran crema
- 1 avocado, sliced
- Hot sauce (optional)
- Fresh cilantro, chopped (optional)
Instructions:
1. Make the Tortillas:
- In a large mixing bowl, combine the flour, baking powder, and salt. Add the vegetable oil and mix until the mixture resembles coarse crumbs.
- Gradually add the warm water, mixing until a soft dough forms. Knead the dough for a few minutes until smooth and elastic.
- Divide the dough into 8 equal pieces and roll each piece into a ball. Cover and let rest for about 15 minutes.
- On a lightly floured surface, roll each dough ball into a thin, round tortilla, about 6-8 inches in diameter.
2. Cook the Tortillas:
- Heat a non-stick skillet or griddle over medium-high heat. Cook each tortilla for about 1-2 minutes on each side, or until lightly browned and puffed up. Keep the cooked tortillas warm in a clean kitchen towel.
3. Prepare the Filling:
- While the tortillas are cooking, heat the refried beans in a small saucepan over medium heat until warmed through.
4. Assemble the Baleadas:
- Spread a generous spoonful of warm refried beans onto each tortilla.
- Sprinkle crumbled queso fresco or feta cheese over the beans.
- Add a dollop of sour cream or Honduran crema.
- Top with avocado slices, hot sauce, and chopped cilantro, if desired.
5. Serve:
- Fold each tortilla in half to enclose the filling.
- Serve the baleadas warm, either on their own or with additional toppings as preferred.
