Hey Foodies! Today I am sharing with you one of my go-to side dish: Honey Balsamic Roasted Carrots! Trust me, once you try them, you'll be hooked!

- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine the olive oil, balsamic vinegar, honey, salt, and pepper.
- Add the sliced carrots to the bowl and toss until evenly coated.
- Arrange the carrots in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and caramelized, stirring halfway through.
- Remove from the oven and transfer the roasted carrots to a serving dish.
- Garnish with fresh chopped parsley before serving.
- Make sure to check the carrots periodically while roasting to prevent them from burning.
- You can customize the sweetness and tanginess of the dish by adjusting the amount of honey and balsamic vinegar.
