Honey Balsamic Roasted Carrots

Hey Foodies! Today I am sharing with you one of my go-to side dish: Honey Balsamic Roasted Carrots! Trust me, once you try them, you'll be hooked!

Ingredients:

  • 1 pound (about 450g) carrots, peeled and sliced diagonally
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the olive oil, balsamic vinegar, honey, salt, and pepper.
  3. Add the sliced carrots to the bowl and toss until evenly coated.
  4. Arrange the carrots in a single layer on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and caramelized, stirring halfway through.
  6. Remove from the oven and transfer the roasted carrots to a serving dish.
  7. Garnish with fresh chopped parsley before serving.
Notes:

  • Make sure to check the carrots periodically while roasting to prevent them from burning.
  • You can customize the sweetness and tanginess of the dish by adjusting the amount of honey and balsamic vinegar.
 
I can almost taste the caramelized sweetness combined with the tangy balsamic vinegar. And that touch of fresh parsley adds such a vibrant pop of color.
