Hey guys, Try this classic Mexican beverage Horchata. This creamy and refreshing drink is perfect for cooling down on a hot day or as a delightful accompaniment to spicy Mexican dishes. With its smooth texture and sweet, cinnamon flavor, homemade horchata is sure to become a favorite in your household.

  • 1 cup long-grain white rice
  • 1 cup blanched almonds
  • 1 cinnamon stick
  • 4 cups water, divided
  • 3/4 cup granulated sugar, or to taste
  • 1 teaspoon vanilla extract
  • Ground cinnamon, for garnish (optional)

  1. Rinse the rice under cold water until the water runs clear. Place the rinsed rice in a large bowl and cover it with water. Let it soak for at least 6 hours or overnight.
  2. In a blender, combine the soaked rice, blanched almonds, cinnamon stick, and 2 cups of water. Blend on high speed until the mixture is smooth and well combined, about 2-3 minutes.
  3. Strain the rice and almond mixture through a fine-mesh sieve or cheesecloth into a large bowl, pressing down with a spoon to extract as much liquid as possible. Discard any solids remaining in the sieve.
  4. Stir in the remaining 2 cups of water, granulated sugar, and vanilla extract into the strained liquid, mixing until the sugar is completely dissolved.
  5. Taste the horchata and adjust the sweetness to your liking by adding more sugar if desired.
  6. Transfer the horchata to a pitcher or container and refrigerate for at least 2 hours, or until chilled.
  7. Before serving, stir the horchata well as it may settle. Pour the chilled horchata into glasses filled with ice.
  8. Sprinkle ground cinnamon on top of each glass for garnish, if desired.
  9. Serve the horchata cold and enjoy the refreshing and creamy flavor!
Note: Horchata can be stored in the refrigerator for up to 3-4 days. Stir well before serving as it may separate while chilling.
