Ingredients:
  • 1 pound fresh chili peppers (such as jalapeños, serranos, or habaneros), stems removed
  • 4 cloves garlic, peeled
  • 1 medium onion, chopped

  • 1 teaspoon salt
  • 1 tablespoon sugar (optional, to balance heat)
  • Juice of 1 lime
Instructions:
  1. Prepare the Peppers:
    • Slice the chili peppers in half lengthwise. If you prefer a milder sauce, remove the seeds and membranes.
  2. Cook the Ingredients:
    • In a medium saucepan, combine the chili peppers, garlic, onion, vinegar, and salt. Bring the mixture to a boil over medium-high heat, then reduce the heat and simmer for about 10-15 minutes, or until the peppers and onions are soft.
  3. Blend the Sauce:
    • Remove the saucepan from the heat and let it cool slightly. Transfer the mixture to a blender and blend until smooth. Be cautious while blending hot liquids.
  4. Strain (Optional):
    • For a smoother sauce, you can strain the mixture through a fine-mesh sieve to remove any solids.
  5. Adjust and Store:
    • Stir in the lime juice and sugar (if using). Taste and adjust the seasoning as needed. Pour the hot sauce into sterilized bottles or jars. Store in the refrigerator for up to a month.
This easy recipe lets you control the intensity and taste, resulting in a sauce that is uniquely yours. Whether you're drizzling it on your breakfast eggs or adding it to a marinade, this hot sauce is sure to become a staple in your kitchen. Enjoy the heat!
