I have also this same problem but I now figured it out. Your cheese choice, don't buy those pre-grated cheese as it often contains anti-caking agents that can affect the texture of the sauce. 👌😉
 
What works for me is not overcooking the sauce. Once it's thickened a bit, I take it off the heat to avoid it becoming too thick or clumpy. Keeps it creamy. 😊
