It all started with Mexican cowboys grilling beef over open flames. Now fajitas are a Tex-Mex classic, and chicken is a hit. Dig in and taste those tasty roots! 🌮🤠
 
Chicken fajitas have an interesting origin! They are believed to have originated in the Rio Grande Valley of Texas in the 1930s to 1940s, particularly among Mexican ranch workers known as vaqueros. These workers were given the tougher, less desirable cuts of meat, including skirt steak, which they marinated and grilled over an open flame. Over time, this style of cooking spread across Texas and eventually evolved to include chicken and other meats, along with the colorful array of peppers and onions that are characteristic of fajitas today. 🌶️🍗
