I recently made Icelandic Skyr Cake, and it was a deliciously creamy and light dessert that's perfect for any occasion. This no-bake cheesecake made with skyr, a traditional Icelandic dairy product, is both refreshing and indulgent. Here’s how you can make it:
Ingredients:
For the Crust:
- 1 1/2 cups graham cracker crumbs or digestive biscuits, crushed
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
For the Filling:
- 2 cups plain skyr (Icelandic yogurt)
- 1 cup cream cheese, softened
- 1 cup heavy whipping cream
- 3/4 cup sugar
- 2 teaspoons vanilla extract
- 1 tablespoon lemon juice
- 2 teaspoons powdered gelatin
- 2 tablespoons water
For the Topping:
- Fresh berries (such as blueberries, raspberries, or strawberries)
- Honey or berry compote (optional)
Instructions:
- Prepare the Crust:
- In a medium bowl, combine the graham cracker crumbs (or crushed digestive biscuits) and sugar. Stir in the melted butter until the mixture resembles wet sand.
- Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Refrigerate while preparing the filling.
- Prepare the Filling:
- In a small bowl, sprinkle the gelatin over 2 tablespoons of water and let it bloom for about 5 minutes. Then, gently heat it in the microwave or over a double boiler until fully dissolved. Set aside to cool slightly.
- In a large bowl, beat the cream cheese and sugar together until smooth and creamy.
- Add the skyr, vanilla extract, and lemon juice to the cream cheese mixture, and beat until well combined.
- In a separate bowl, whip the heavy cream until it forms stiff peaks.
- Gently fold the whipped cream into the skyr mixture until fully incorporated.
- Gradually stir in the dissolved gelatin until evenly mixed.
- Assemble the Cake:
- Pour the filling over the prepared crust in the springform pan, spreading it out evenly.
- Smooth the top with a spatula, then refrigerate for at least 4 hours, or until set. Overnight is best for a firm cake.
- Add the Topping:
- Before serving, remove the skyr cake from the springform pan and transfer it to a serving plate.
- Top with fresh berries and drizzle with honey or berry compote, if desired.
