Instructions:​

  1. Prepare the Crust:
    • In a medium bowl, combine the graham cracker crumbs (or crushed digestive biscuits) and sugar. Stir in the melted butter until the mixture resembles wet sand.
    • Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Refrigerate while preparing the filling.
  2. Prepare the Filling:
    • In a small bowl, sprinkle the gelatin over 2 tablespoons of water and let it bloom for about 5 minutes. Then, gently heat it in the microwave or over a double boiler until fully dissolved. Set aside to cool slightly.
    • In a large bowl, beat the cream cheese and sugar together until smooth and creamy.

    • Gradually stir in the dissolved gelatin until evenly mixed.
  3. Assemble the Cake:
    • Pour the filling over the prepared crust in the springform pan, spreading it out evenly.
    • Smooth the top with a spatula, then refrigerate for at least 4 hours, or until set. Overnight is best for a firm cake.
  4. Add the Topping:
    • Before serving, remove the skyr cake from the springform pan and transfer it to a serving plate.
    • Top with fresh berries and drizzle with honey or berry compote, if desired.
