  • 1 cup (225g) unsalted butter, cubed
  • 8 ounces (225g) dark chocolate, chopped
  • 1 cup (200g) granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • Zest of 1 orange
  • 1 cup (125g) all-purpose flour
  • Pinch of salt
For the Orange Syrup:

  • Juice of 2 oranges
  • 1/4 cup (50g) granulated sugar
For the Chocolate Ganache:

  • 1 cup (240ml) heavy cream
  • 8 ounces (225g) dark chocolate, chopped
For Garnish:

  • Zest of 1 orange
  • Fresh orange slices (optional)
Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch (23cm) round cake pan and line the bottom with parchment paper.
  2. In a heatproof bowl set over a pot of simmering water, melt the butter and chopped dark chocolate together, stirring until smooth. Remove from heat and let it cool slightly.
  3. In a separate bowl, whisk together the sugar, eggs, vanilla extract, and orange zest until well combined.
  4. Gradually pour the melted chocolate mixture into the egg mixture, whisking constantly until smooth and glossy.
  5. Sift in the flour and salt, then gently fold the dry ingredients into the chocolate mixture until just combined.
  6. Pour the batter into the prepared cake pan and spread it evenly with a spatula.
  7. Bake in the preheated oven for 25-30 minutes, or until the edges are set but the center is still slightly gooey.
  8. While the cake is baking, prepare the orange syrup. In a small saucepan, combine the orange juice and sugar. Bring to a simmer over medium heat, stirring until the sugar is dissolved. Remove from heat and set aside to cool.
  9. Once the cake is done, remove it from the oven and let it cool in the pan for 10 minutes. Then, carefully transfer it to a wire rack to cool completely.
  10. While the cake is cooling, prepare the chocolate ganache. In a small saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and add the chopped dark chocolate. Let it sit for a minute, then stir until smooth and glossy.
  11. Once the cake has cooled, brush the top with the orange syrup, allowing it to soak into the cake.
  12. Pour the chocolate ganache over the top of the cake, allowing it to drip down the sides.
  13. Garnish with orange zest and fresh orange slices, if desired.
  14. Chill the gateau in the refrigerator for at least 1 hour before serving to allow the ganache to set.
  15. Slice and serve this heavenly Fudgy Chocolate and Orange Gateau to delight your taste buds with its luxurious flavors!
Enjoy the indulgence and savor every blissful bite of this exquisite dessert creation!
