Here's a simple and delicious recipe for Instant Pot Mac and Cheese:

Ingredients:​

  • 16 ounces (1 pound) elbow macaroni
  • 4 cups water
  • 2 teaspoons salt
  • 4 tablespoons unsalted butter
  • 2 cups whole milk
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon onion powder (optional)
  • 1/4 teaspoon paprika (optional)
  • 1/4 teaspoon black pepper
  • 3 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese (optional, for added creaminess)

Instructions:​

  1. Prepare the Instant Pot:
    • Place the inner pot into the Instant Pot base.
    • Add the elbow macaroni, water, and salt to the pot.
  2. Pressure Cook the Pasta:
    • Close the lid and set the pressure release valve to the sealing position.
    • Select the "Manual" or "Pressure Cook" function and set the cooking time to 4 minutes on high pressure.
    • Once the cooking time is complete, perform a quick pressure release by carefully turning the pressure release valve to the venting position.
  3. Make the Cheese Sauce:
    • While the pasta is cooking, in a separate saucepan over medium heat, melt the butter.
    • Whisk in the flour and cook for about 1-2 minutes to form a roux, stirring constantly.
    • Gradually pour in the milk while whisking continuously to avoid lumps.
    • Add the garlic powder, onion powder, paprika, black pepper, and continue to whisk until the sauce thickens, about 3-5 minutes.
    • Gradually add the shredded cheddar cheese to the sauce, stirring until the cheese is melted and the sauce is smooth. If using mozzarella cheese, add it at this stage as well.
  4. Combine Pasta and Cheese Sauce:
    • Once the pressure has been released from the Instant Pot, open the lid and stir the cooked pasta.
    • Pour the prepared cheese sauce over the cooked pasta in the Instant Pot and stir until well combined.
  5. Serve:
    • Allow the mac and cheese to sit for a few minutes to thicken.
    • Serve hot, garnished with additional shredded cheese or chopped parsley if desired.
