Hello everyone, I want to share with you the Instant Pot Spicy Short Rib Noodle Soup recipe. It is a comforting and flavorful dish that's perfect for warming you up on chilly days. This recipe is made easy with the help of the Instant Pot, allowing you to enjoy this delicious soup in a fraction of the time.

Ingredients:

  • 2 pounds beef short ribs, bone-in
  • Salt and black pepper, to taste
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 6 cups beef broth
  • 2 cups water
  • 2 tablespoons soy sauce
  • 2 tablespoons gochujang (Korean red pepper paste)
  • 1 tablespoon gochugaru (Korean red pepper flakes)
  • 1 tablespoon sesame oil
  • 8 ounces dried ramen noodles or other noodles of your choice
  • 2 green onions, thinly sliced
  • Optional garnishes: soft-boiled eggs, sliced chili peppers, chopped cilantro, lime wedges
Instructions:

  1. Season the beef short ribs with salt and black pepper on both sides.
  2. Turn on the Instant Pot to the "Sauté" mode. Add the vegetable oil to the pot.
  3. Once the oil is hot, add the seasoned short ribs to the pot and sear them on all sides until browned, about 3-4 minutes per side. Remove the short ribs from the pot and set aside.
  4. Add the chopped onion to the Instant Pot and sauté for 2-3 minutes, until softened.
  5. Stir in the minced garlic and grated ginger, and sauté for an additional 1-2 minutes until fragrant.
  6. Pour in the beef broth and water, and scrape any browned bits from the bottom of the pot to deglaze.
  7. Return the browned short ribs to the pot. Add the soy sauce, gochujang, gochugaru, and sesame oil, and give everything a good stir to combine.
  8. Close the lid of the Instant Pot and set the valve to the "Sealing" position. Cook on high pressure for 45 minutes.
  9. Once the cooking time is complete, allow the pressure to release naturally for 10-15 minutes, then carefully do a quick release to release any remaining pressure.
  10. Open the lid of the Instant Pot and carefully remove the cooked short ribs from the pot. Use two forks to shred the meat, discarding any bones and excess fat. Return the shredded meat to the pot.
  11. Turn the Instant Pot back to the "Sauté" mode. Add the dried ramen noodles to the pot and cook according to the package instructions, usually about 3-4 minutes, until the noodles are tender.
  12. Once the noodles are cooked, taste the soup and adjust the seasoning with salt and pepper, if needed.
  13. Ladle the Instant Pot Spicy Short Rib Noodle Soup into bowls and garnish with sliced green onions and any optional garnishes of your choice.
  14. Serve hot and enjoy the comforting and flavorful soup!
Note: You can customize the level of spiciness in this soup by adjusting the amount of gochujang and gochugaru according to your taste preferences. Feel free to add more or less to suit your desired heat level.
