- 2 pounds potatoes, peeled and diced
- 4 tablespoons butter (divided)
- 1 small head cabbage or a bunch of kale, finely shredded
- 1 cup milk or cream
- Salt and pepper to taste
- Optional: chopped scallions or leeks for extra flavor
- Boil the diced potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and set aside.
- In a separate pot, melt 2 tablespoons of butter over medium heat. Add the shredded cabbage or kale and cook until wilted and tender, about 8-10 minutes.
- Mash the cooked potatoes with the remaining 2 tablespoons of butter and milk or cream until smooth and creamy. Season with salt and pepper to taste.
- Stir the cooked cabbage or kale into the mashed potatoes until well combined.
- If desired, mix in chopped scallions or leeks for extra flavor.
- Serve the Colcannon hot, garnished with an extra pat of butter if desired.
