Hey everyone, I want to introduce you to a classic comfort food: Irish Stew! 🍲🍀 It’s a hearty, flavorful dish with tender beef, vegetables, and a rich broth that's perfect for warming up on a chilly day. Enjoy a taste of Ireland with this delicious stew! 😋✨

Ingredients:
  • 2 pounds beef stew meat (cut into 1-inch cubes)
  • 2 tablespoons vegetable oil

  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 4 cups beef broth
  • 1 cup Guinness beer (optional, for extra flavor)
  • 4 large carrots, peeled and sliced
  • 4 large potatoes, peeled and diced
  • 2 parsnips, peeled and sliced (optional)
  • 1 cup frozen peas
  • 2 tablespoons tomato paste
  • 2 tablespoons all-purpose flour
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
Instructions:

1. Brown the Meat:

  • In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
  • Add the beef cubes and brown on all sides. Remove the meat and set aside.
2. Sauté Vegetables:
  • In the same pot, add the chopped onion and cook until softened, about 5 minutes.
  • Stir in the garlic and cook for another minute.
3. Make the Stew Base:
  • Add the tomato paste and flour to the pot. Cook, stirring constantly, for 2 minutes.
  • Gradually stir in the beef broth and Guinness beer (if using), scraping up any browned bits from the bottom of the pot.
4. Add Ingredients:
  • Return the browned beef to the pot. Add the carrots, potatoes, parsnips (if using), thyme, rosemary, salt, and pepper.
  • Bring the stew to a boil, then reduce the heat to low and cover. Simmer for about 1.5 to 2 hours, or until the meat is tender and the vegetables are cooked through.
5. Add Peas:
  • Stir in the frozen peas and cook for an additional 5 minutes.
6. Serve:
  • Garnish with chopped fresh parsley before serving.

Hello all! I love Irish stew! I think letting it simmer for a few hours makes the meat super tender. Though if you're short on time, a pressure cooker can do wonders too! ⏱️
