- 2 pounds beef stew meat (cut into 1-inch cubes)
- 2 tablespoons vegetable oil

- 3 garlic cloves, minced
- 4 cups beef broth
- 1 cup Guinness beer (optional, for extra flavor)
- 4 large carrots, peeled and sliced
- 4 large potatoes, peeled and diced
- 2 parsnips, peeled and sliced (optional)
- 1 cup frozen peas
- 2 tablespoons tomato paste
- 2 tablespoons all-purpose flour
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
1. Brown the Meat:
- In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
- Add the beef cubes and brown on all sides. Remove the meat and set aside.
- In the same pot, add the chopped onion and cook until softened, about 5 minutes.
- Stir in the garlic and cook for another minute.
- Add the tomato paste and flour to the pot. Cook, stirring constantly, for 2 minutes.
- Gradually stir in the beef broth and Guinness beer (if using), scraping up any browned bits from the bottom of the pot.
- Return the browned beef to the pot. Add the carrots, potatoes, parsnips (if using), thyme, rosemary, salt, and pepper.
- Bring the stew to a boil, then reduce the heat to low and cover. Simmer for about 1.5 to 2 hours, or until the meat is tender and the vegetables are cooked through.
- Stir in the frozen peas and cook for an additional 5 minutes.
- Garnish with chopped fresh parsley before serving.
