It's a balanced and satisfying way to fuel your day with the vibrant flavors of Japan!

Ingredients:

  • 1 cup cooked rice (white or brown)
  • 2 salmon fillets
  • 2 tablespoons miso paste
  • 1 tablespoon mirin (Japanese sweet rice wine)
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • Assorted pickled vegetables (such as cucumber, radish, or carrots)
  • 2 eggs
  • Nori seaweed, sliced scallions, sesame seeds (for garnish)
Instructions:

  1. Prepare the miso glaze by combining the miso paste, mirin, soy sauce, rice vinegar, and sesame oil in a small bowl. Mix until smooth.
  2. Preheat your oven to 400°F (200°C). Place the salmon fillets on a baking sheet lined with parchment paper and brush them with the miso glaze.
  3. Bake the salmon in the preheated oven for 12-15 minutes, or until cooked through and flaky.
  4. While the salmon is baking, prepare the soft-boiled eggs. Bring a pot of water to a boil, gently lower the eggs into the boiling water, and cook for 6-7 minutes.
  5. Remove the eggs from the boiling water and immediately transfer them to a bowl of ice water to stop the cooking process. Once cooled, peel the eggs and set them aside.
  6. Assemble your breakfast bowl by placing a serving of cooked rice in the bottom of each bowl.
  7. Top the rice with a miso-glazed salmon fillet, a soft-boiled egg (sliced in half), and assorted pickled vegetables.
  8. Garnish with sliced nori seaweed, sliced scallions, and sesame seeds.
  9. Serve your Japanese-Inspired Breakfast Bowl hot, and enjoy a nutritious and flavorful start to your day!
