This wholesome and nutritious dish features a colorful array of fresh and flavorful ingredients, including steamed rice, miso-glazed salmon, pickled vegetables, and a soft-boiled egg. Ingredients:
- 1 cup cooked rice (white or brown)
- 2 salmon fillets
- 2 tablespoons miso paste
- 1 tablespoon mirin (Japanese sweet rice wine)
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- Assorted pickled vegetables (such as cucumber, radish, or carrots)
- 2 eggs
- Nori seaweed, sliced scallions, sesame seeds (for garnish)
- Prepare the miso glaze by combining the miso paste, mirin, soy sauce, rice vinegar, and sesame oil in a small bowl. Mix until smooth.
- Preheat your oven to 400°F (200°C). Place the salmon fillets on a baking sheet lined with parchment paper and brush them with the miso glaze.
- Bake the salmon in the preheated oven for 12-15 minutes, or until cooked through and flaky.
- While the salmon is baking, prepare the soft-boiled eggs. Bring a pot of water to a boil, gently lower the eggs into the boiling water, and cook for 6-7 minutes.
- Remove the eggs from the boiling water and immediately transfer them to a bowl of ice water to stop the cooking process. Once cooled, peel the eggs and set them aside.
