Ingredients:

  • 4 salmon fillets
  • 1/4 cup soy sauce
  • 2 tablespoons mirin (Japanese sweet rice wine)
  • 2 tablespoons sake (Japanese rice wine) or dry white wine
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon sesame oil
  • 2 green onions, thinly sliced
  • Toasted sesame seeds, for garnish
  • Steamed rice, for serving
  • Stir-fried vegetables, for serving
Instructions:

  1. In a bowl, whisk together soy sauce, mirin, sake (or white wine), brown sugar, minced garlic, grated ginger, and sesame oil to make the teriyaki sauce.
  2. Place the salmon fillets in a shallow dish or resealable plastic bag, and pour the teriyaki sauce over them. Make sure the salmon is well coated in the sauce. Cover or seal the dish/bag, and marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
  3. Preheat the grill or grill pan to medium-high heat. Lightly oil the grill grates to prevent sticking.
  4. Remove the salmon fillets from the marinade, shaking off any excess sauce, and place them on the grill. Reserve the marinade for basting.
  5. Grill the salmon for 4-5 minutes per side, or until cooked through and caramelized on the outside, basting occasionally with the reserved marinade.
  6. Once the salmon is cooked through, remove it from the grill and transfer to a serving platter.
  7. Garnish the grilled teriyaki salmon with thinly sliced green onions and toasted sesame seeds.
  8. Serve the salmon hot, alongside steamed rice and stir-fried vegetables.
