The tastes of Bhutan never fail to take me back to those wonderful meals I had when visiting the country. Jasha Maroo, a flavorful and filling Bhutanese chicken stew, is one meal that sticks out. It's ideal for a cozy lunch. Allow me to demonstrate how to make this delectable dinner for you:

- 500g boneless chicken thighs, diced
- 2 onions, finely chopped
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 tomatoes, diced
- 2 green chili peppers, sliced (adjust according to spice preference)
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon chili powder (adjust according to spice preference)
- Salt to taste
- 2 tablespoons vegetable oil
- Fresh cilantro leaves for garnish
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and sauté until they turn golden brown and caramelized.
- Add the minced garlic and grated ginger to the pot, and cook for another minute until fragrant.
- Toss in the diced chicken thighs and cook until they are lightly browned on all sides.
- Stir in the diced tomatoes and sliced green chili peppers, and let the mixture cook for a few minutes until the tomatoes soften and release their juices.
- Sprinkle the turmeric powder, cumin powder, coriander powder, and chili powder over the chicken mixture. Stir well to coat the chicken evenly with the spices.
- Pour enough water into the pot to just cover the chicken, and season with salt to taste. Bring the stew to a gentle simmer, then cover and cook for about 20-25 minutes, or until the chicken is cooked through and tender.
- Once the Jasha Maroo is ready, taste and adjust the seasoning if needed. Garnish with fresh cilantro leaves before serving.
- Serve the Jasha Maroo hot, accompanied by steamed rice or Bhutanese red rice for an authentic Bhutanese meal experience!
