HI wanted to share one of my favorite Arabian dishes: Kabsa! This is a fragrant and flavorful rice dish that's often considered the national dish of Saudi Arabia. It features spiced rice cooked with meat (usually chicken or lamb), tomatoes, and a blend of aromatic spices like cinnamon, cloves, and cardamom. It's perfect for a family meal or a special occasion. Has anyone tried making Kabsa before? Would love to hear your tips and experiences!

- 1 whole chicken, cut into pieces (or 1 lb lamb, cubed)
- 2 cups basmati rice
- 1 large onion, finely chopped
- 3 tomatoes, chopped
- 4 cloves garlic, minced
- 3 tablespoons tomato paste
- 1/4 cup vegetable oil
- 1/2 cup raisins
- 1/2 cup slivered almonds
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cloves
- 1 teaspoon ground cardamom
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon ground black pepper
- 2 bay leaves
- 4 cups chicken broth (or water)
- Salt to taste
- Fresh cilantro or parsley for garnish
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened and golden brown.
- Add the garlic and cook for another minute until fragrant.
- Add the chicken pieces (or lamb) and cook until browned on all sides.
- Stir in the chopped tomatoes, tomato paste, ground cinnamon, cloves, cardamom, coriander, cumin, black pepper, and bay leaves. Cook for a few minutes until the spices are fragrant.
- Add the rice and stir to coat it with the spices and tomato mixture.
- Pour in the chicken broth (or water) and add salt to taste. Bring to a boil, then reduce the heat to low, cover, and simmer for about 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
- In a small pan, toast the slivered almonds until golden brown. Set aside.
- Once the Kabsa is done, fluff the rice with a fork and gently mix in the raisins and toasted almonds.
- Garnish with fresh cilantro or parsley before serving
