Ingredients:
- 1/4 cup (60ml) grapeseed oil
- 1kg boneless pork belly, skin on
- 400ml Japanese cooking sake
- 1 cup (250ml) soy sauce
- 100ml mirin
- 70g brown sugar
- 2 tablespoons oroshi ginger (Japanese ginger paste)
- 6 eggs

- Hot mustard
- Sliced cucumber pickles
- Red coral lettuce leaves
- Kimchi
- Roasted sesame seeds
- Togarashi seasoning
Instruction:
- Heat oil in a large heavy-based saucepan over high heat. Sear the pork belly on all sides until lightly golden and the skin is blistered (about 5-6 minutes).
- In a large jug, combine sake, soy sauce, mirin, brown sugar, ginger, and 4 cups (1L) of water. Pour over the pork belly in the saucepan. Bring to a simmer, skim off any impurities, then cover and simmer over low heat for 1 hour 15 minutes to 1 hour 30 minutes, until the pork is tender. Remove from heat and let it cool to room temperature. Chill overnight to enhance flavors.
- Boil eggs in a saucepan for 6 1/2 minutes. Peel and set aside in the cooking liquid with the pork overnight.
- The next day, remove eggs and set aside. Reheat the pork gently in the braising liquid over medium heat for 20-25 minutes until warmed through. Slice the pork thinly and arrange on a serving platter. Pour over some of the braising liquid and top with halved eggs.
- To serve, place a slice of pork on a lettuce leaf, add desired condiments and a piece of egg, then roll up to eat.
