Ingredients:
For the Salad:
- 2 cups cooked jasmine rice, cooled
- 200g cooked shrimp, peeled and deveined (optional for a vegetarian version)
- 1 cup shredded coconut, toasted
- 1 cup bean sprouts
- 1 cup cucumber, julienned
- 1 cup carrots, julienned
- 1 cup Thai basil leaves
- 1 cup mint leaves
- 1 cup cilantro leaves
- 1/2 cup shallots, thinly sliced
- 1/2 cup roasted peanuts, chopped
- 2 tablespoons dried shrimp, optional for added flavor
For the Dressing:
- 3 tablespoons fish sauce
- 2 tablespoons lime juice
- 1 tablespoon palm sugar (or brown sugar)
- 2-3 Thai bird's eye chilies, finely chopped (adjust to taste)
- 2 cloves garlic, minced
Instructions:
- Prepare the Dressing:
- In a small bowl, whisk together fish sauce, lime juice, palm sugar, Thai chilies, and minced garlic until the sugar is dissolved and all ingredients are well combined. Set aside.
- Assemble the Salad:
- In a large mixing bowl, combine cooled jasmine rice, cooked shrimp (if using), shredded coconut, bean sprouts, julienned cucumber, carrots, Thai basil leaves, mint leaves, cilantro leaves, shallots, and chopped roasted peanuts. Toss gently to mix.
- Add the Dressing:
- Pour the prepared dressing over the salad mixture. Toss again until everything is evenly coated with the dressing.
- Serve:
- Transfer the Khao Yam to a serving platter or individual plates.
