- For the Kimchi Jeon:
- 1 cup kimchi, chopped (you can adjust the spiciness based on your preference)
- ½ cup all-purpose flour
- 1 large egg
- ¼ cup water
- 1 tablespoon chopped green onions
- Vegetable oil for frying
- Sesame seeds for garnish (optional)
- For the Gochujang Mayo Dip:
- ½ cup mayonnaise
- 1-2 tablespoons gochujang (Korean chili paste)
- 1 tablespoon rice vinegar
- 1 teaspoon soy sauce
- Pinch of garlic powder
- Make the Kimchi Jeon Batter: In a large bowl, combine the chopped kimchi, flour, egg, water, and green onions. Mix well until a thick batter forms.
- Heat about 1/4 inch of vegetable oil in a large skillet over medium heat. Once the oil is hot, scoop tablespoons of batter into the pan, flattening them slightly with the back of the spoon.
- Fry the kimchi jeon for 2-3 minutes per side, or until golden brown and crispy. Drain on paper towels to remove excess oil.
- While the jeon cook, make the Gochujang Mayo Dip: In a small bowl, whisk together the mayonnaise, gochujang, rice vinegar, soy sauce, and garlic powder. Adjust the amount of gochujang to your desired level of spice.
- To serve, arrange the Kimchi Jeon on a plate and drizzle with the Gochujang Mayo Dip. Garnish with sesame seeds, if desired. Enjoy!
