One popular Indian dish that I liked recently is Lamb Curry. It's a popular and aromatic dish featuring tender pieces of lamb cooked in a rich and flavorful sauce. I'm sharing here a recipe to serve 5 people:

Ingredients:

  • 1 kg boneless lamb shoulder or leg, cut into bite-sized pieces
  • 3 tablespoons vegetable oil or ghee
  • 2 onions, finely chopped
  • 4 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tomatoes, chopped
  • 2 tablespoons tomato paste
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 1 cinnamon stick
  • 2-3 cardamom pods
  • 2-3 cloves
  • 1 bay leaf
  • 1 cup coconut milk or plain yogurt
  • 1 cup vegetable or chicken broth
  • Salt and pepper to taste
  • Fresh cilantro leaves for garnish (optional)
  • Cooked rice or naan bread for serving

Instructions:

  1. Prepare the Lamb:
    • Trim any excess fat from the lamb pieces and cut them into bite-sized cubes.
  2. Sauté Aromatics:
    • Heat the vegetable oil or ghee in a large pot or Dutch oven over medium heat.
    • Add the chopped onions to the pot and cook until they are soft and translucent, about 5-7 minutes.
    • Stir in the minced garlic and grated ginger, and cook for another 2 minutes until fragrant.
  3. Add Spices:
    • Add the curry powder, ground cumin, ground coriander, turmeric powder, and cayenne pepper to the pot. Stir well to coat the onions and aromatics with the spices. Cook for 1 minute until the spices are fragrant.
  4. Cook Lamb:
    • Add the cubed lamb pieces to the pot, stirring to coat them with the spice mixture.
    • Cook the lamb for about 5-7 minutes until it is browned on all sides.
  5. Simmer with Tomatoes:
    • Add the chopped tomatoes, tomato paste, cinnamon stick, cardamom pods, cloves, and bay leaf to the pot. Stir to combine.
    • Pour in the coconut milk or yogurt and vegetable or chicken broth. Stir well to combine.
  6. Simmer and Serve:
    • Bring the curry to a simmer, then reduce the heat to low and cover the pot. Let it simmer gently for about 1.5 to 2 hours, or until the lamb is tender and the sauce has thickened.
    • Taste the curry and adjust the seasoning with salt and pepper as needed.
    • Once the lamb is cooked through and the sauce has thickened, remove the pot from heat.
    • Garnish the Lamb Curry with fresh cilantro leaves, if desired.
    • Serve hot with cooked rice or naan bread on the side.
