One popular Indian dish that I liked recently is Lamb Curry. It's a popular and aromatic dish featuring tender pieces of lamb cooked in a rich and flavorful sauce. I'm sharing here a recipe to serve 5 people:
Easy Lamb Curry Recipe
Ingredients:
- 1 kg boneless lamb shoulder or leg, cut into bite-sized pieces
- 3 tablespoons vegetable oil or ghee
- 2 onions, finely chopped
- 4 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 tomatoes, chopped
- 2 tablespoons tomato paste
- 2 teaspoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- 1/4 teaspoon cayenne pepper (adjust to taste)
- 1 cinnamon stick
- 2-3 cardamom pods
- 2-3 cloves
- 1 bay leaf
- 1 cup coconut milk or plain yogurt
- 1 cup vegetable or chicken broth
- Salt and pepper to taste
- Fresh cilantro leaves for garnish (optional)
- Cooked rice or naan bread for serving
Instructions:
- Prepare the Lamb:
- Trim any excess fat from the lamb pieces and cut them into bite-sized cubes.
- Sauté Aromatics:
- Heat the vegetable oil or ghee in a large pot or Dutch oven over medium heat.
- Add the chopped onions to the pot and cook until they are soft and translucent, about 5-7 minutes.
- Stir in the minced garlic and grated ginger, and cook for another 2 minutes until fragrant.
- Add Spices:
- Add the curry powder, ground cumin, ground coriander, turmeric powder, and cayenne pepper to the pot. Stir well to coat the onions and aromatics with the spices. Cook for 1 minute until the spices are fragrant.
- Cook Lamb:
- Add the cubed lamb pieces to the pot, stirring to coat them with the spice mixture.
- Cook the lamb for about 5-7 minutes until it is browned on all sides.
- Simmer with Tomatoes:
- Add the chopped tomatoes, tomato paste, cinnamon stick, cardamom pods, cloves, and bay leaf to the pot. Stir to combine.
- Pour in the coconut milk or yogurt and vegetable or chicken broth. Stir well to combine.
- Simmer and Serve:
- Bring the curry to a simmer, then reduce the heat to low and cover the pot. Let it simmer gently for about 1.5 to 2 hours, or until the lamb is tender and the sauce has thickened.
- Taste the curry and adjust the seasoning with salt and pepper as needed.
- Once the lamb is cooked through and the sauce has thickened, remove the pot from heat.
- Garnish the Lamb Curry with fresh cilantro leaves, if desired.
- Serve hot with cooked rice or naan bread on the side.
