Ingredients:

  • 1 kg (2.2 lbs) lamb shoulder or leg, thinly sliced
  • 4 cloves garlic, minced
  • 1 large onion, thinly sliced
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground paprika
  • 1 tsp ground turmeric
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • 1/2 tsp ground black pepper
  • 1/2 tsp ground cloves
  • 1/2 tsp cayenne pepper (optional for heat)
  • Salt to taste
For Serving:

  • Warm pita bread or flatbreads
  • Fresh vegetables (tomatoes, cucumbers, red onions, lettuce)
  • Tzatziki or tahini sauce
  • Fresh parsley, chopped
Instructions:
  1. Marinate the Lamb:
    • In a large mixing bowl, combine the minced garlic, sliced onion, olive oil, lemon juice, cumin, coriander, paprika, turmeric, cinnamon, cardamom, black pepper, cloves, cayenne pepper (if using), and salt.
    • Add the thinly sliced lamb to the bowl and mix well to ensure all pieces are coated with the marinade. Cover and refrigerate for at least 2 hours, preferably overnight for maximum flavor.
  2. Cook the Lamb:
    • Preheat your grill or a large skillet over medium-high heat. If using a skillet, add a bit of oil to prevent sticking.
    • Cook the lamb slices in batches to avoid overcrowding. Grill or sear each side for about 3-4 minutes or until fully cooked and slightly charred. Remove from heat and set aside.
  3. Prepare the Vegetables:
    • While the lamb is cooking, slice the fresh vegetables and prepare the sauces for serving.
  4. Assemble the Shawarma:
    • Warm the pita bread or flatbreads. Place a portion of the cooked lamb on each bread.
    • Top with fresh vegetables and drizzle with tzatziki or tahini sauce. Garnish with chopped parsley.
  5. Serve and Enjoy:
    • Roll up the flatbreads and serve immediately. Enjoy your homemade lamb shawarma!

Tips:

  • For extra tenderness, consider marinating the lamb with a bit of yogurt in addition to the spices.
  • You can also use a vertical rotisserie if you have one for a more authentic shawarma experience.
