Ingredients:

For the Grilled Chicken Shawarma:

  • 1 pound boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground paprika
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper, to taste
  • Juice of 1 lemon
For the Yogurt Sauce:

  • 1 cup plain Greek yogurt
  • 2 tablespoons tahini
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Salt and pepper, to taste
For Assembly:

  • Flatbread or pita bread
  • Sliced tomatoes
  • Sliced cucumbers
  • Thinly sliced red onion
  • Fresh parsley leaves
  • Pickles (optional)
Instructions:

  1. In a bowl, combine olive oil, minced garlic, ground cumin, ground coriander, ground paprika, ground turmeric, ground cinnamon, cayenne pepper (if using), salt, pepper, and lemon juice to make the marinade for the chicken.
  2. Add chicken thighs to the marinade, making sure they are well coated. Cover the bowl and let the chicken marinate in the refrigerator for at least 1 hour, or up to overnight for maximum flavor.
  3. Preheat your grill or grill pan to medium-high heat.
  4. Remove the chicken from the marinade and discard any excess marinade.
  5. Grill the chicken thighs for 5-6 minutes per side, or until they are cooked through and have nice grill marks. Once cooked, remove the chicken from the grill and let it rest for a few minutes before slicing.
  6. While the chicken is resting, prepare the yogurt sauce. In a bowl, combine Greek yogurt, tahini, lemon juice, minced garlic, salt, and pepper. Mix well until smooth and creamy.
  7. To assemble the wraps, warm the flatbread or pita bread according to package instructions.
  8. Spread a generous amount of yogurt sauce on each piece of flatbread or pita bread.
  9. Top with sliced grilled chicken, sliced tomatoes, sliced cucumbers, thinly sliced red onion, fresh parsley leaves, and pickles if desired.
  10. Roll up the wraps tightly and serve immediately.
  11. Enjoy your Lebanese-Inspired Grilled Chicken Shawarma Wraps, a delicious fusion of flavors that will transport you to the bustling streets of Beirut with every bite!
