Ingredients:


  • For the crust:
    • 1 1/2 cups all-purpose flour
    • 1/4 cup granulated sugar
    • 1/2 cup cold unsalted butter, cubed
    • 1/4 tsp salt
    • 1 large egg yolk
  • For the filling:
    • 1 cup ricotta cheese
    • 1/2 cup granulated sugar
    • Juice and zest of 2 lemons
    • 1/4 cup heavy cream
    • 1 large egg
    • 1/4 cup chopped fresh basil
  • For garnish:
    • Fresh basil leaves
    • Lemon zest
Instructions:

  1. Prepare the crust: Preheat your oven to 350°F (175°C). In a food processor, pulse together flour, sugar, butter, and salt until the mixture resembles coarse crumbs. Add the egg yolk and pulse until the dough comes together. Press the dough into the bottom and sides of a tart pan.
  2. Blind bake: Bake the crust for 15 minutes, then remove from the oven and let cool slightly.
  3. Make the filling: In a bowl, whisk together ricotta cheese, sugar, lemon juice, lemon zest, heavy cream, and egg until smooth. Fold in the chopped basil.
  4. Bake the tart: Pour the ricotta filling into the pre-baked crust. Bake for 25-30 minutes, or until the filling is set and slightly golden.
  5. Garnish and serve: Let the tart cool completely. Garnish with fresh basil leaves and additional lemon zest before serving.
