- 1 cup ricotta cheese
- 1 cup all-purpose flour
- 2 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- Zest and juice of 1 lemon
- 2 large eggs
- 3/4 cup milk
- 1 tsp vanilla extract
- 2 tbsp melted butter
- Fresh berries (strawberries, blueberries, raspberries)
- Maple syrup for serving
- Mix the dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and baking soda.
- Whisk the wet ingredients: In another bowl, combine the ricotta, lemon zest, lemon juice, eggs, milk, vanilla extract, and melted butter. Stir until smooth.
- Combine and cook: Gradually add the wet ingredients to the dry, mixing just until combined. Heat a griddle or skillet over medium heat and lightly grease it. Pour 1/4 cup of batter for each pancake and cook until bubbles form on the surface. Flip and cook until golden brown.
