- 1 lb shrimp, peeled and deveined
- 1 bunch asparagus, trimmed
- 4 cloves garlic, minced
- 2 tbsp butter
- 2 tbsp olive oil
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh parsley for garnish
- Prep time! Season the shrimp with salt and pepper. Trim and cut the asparagus into bite-sized pieces.
- Cook the asparagus: In a large pan, heat 1 tbsp of olive oil over medium heat. Sauté the asparagus for 4-5 minutes until tender-crisp. Remove from the pan and set aside.
- Sizzle that shrimp! In the same pan, add the remaining olive oil and butter. Once melted, add the garlic and sauté until fragrant. Toss in the shrimp and cook for 2-3 minutes on each side until pink and opaque.
