Ingredients:


  • 1 lb shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed
  • 4 cloves garlic, minced
  • 2 tbsp butter
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh parsley for garnish
Instructions:

  1. Prep time! Season the shrimp with salt and pepper. Trim and cut the asparagus into bite-sized pieces.
  2. Cook the asparagus: In a large pan, heat 1 tbsp of olive oil over medium heat. Sauté the asparagus for 4-5 minutes until tender-crisp. Remove from the pan and set aside.
  3. Sizzle that shrimp! In the same pan, add the remaining olive oil and butter. Once melted, add the garlic and sauté until fragrant. Toss in the shrimp and cook for 2-3 minutes on each side until pink and opaque.
  4. Bring it together: Return the asparagus to the pan and pour in the lemon juice. Stir everything together, letting the flavors meld for another minute.
