Ingredients:

  • 8 oz (225g) spaghetti or your favorite pasta
  • 1 lb (450g) large shrimp, peeled and deveined
  • Salt and pepper to taste
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
  • Zest and juice of 1 large lemon
  • 1/4 cup (60ml) dry white wine or chicken broth
  • 1/4 cup (60g) unsalted butter, cut into small pieces
  • 1/4 cup (25g) freshly grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
Instructions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside.
  2. Prepare the Shrimp:
    • Season the shrimp with salt and pepper.
    • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side, or until pink and opaque. Remove the shrimp from the skillet and set aside.
  3. Make the Sauce:
    • In the same skillet, add the remaining 2 tablespoons of olive oil. Add the minced garlic and red pepper flakes (if using) and cook for about 1 minute, or until fragrant.
