Ingredients:

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 tablespoon culinary lavender buds
  • Zest of 1 lemon
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • Optional: additional culinary lavender buds for decoration

Instructions:
  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Crush the culinary lavender buds slightly using a mortar and pestle or your fingers to release their aroma, then add them to the butter mixture along with the lemon zest. Mix until well combined.
  4. Gradually add the flour and salt to the butter mixture, mixing until a dough forms.
  5. Roll out the dough on a lightly floured surface to about 1/4 inch (6 mm) thickness. Use cookie cutters to cut out shapes or simply slice the dough into squares or rectangles.
  6. Place the cookies onto the prepared baking sheet, spacing them slightly apart.
  7. If desired, lightly press additional culinary lavender buds onto the tops of the cookies for decoration.
  8. Bake in the preheated oven for 12-15 minutes, or until the edges of the cookies are just beginning to turn golden brown.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
