Lemongrass Chicken Recipe
Ingredients:
For the Marinade:- 2 stalks fresh lemongrass (tender part only, minced)
- 4 cloves garlic (minced)
- 1 tablespoon fresh ginger (grated)
- 2 tablespoons soy sauce
- 2 tablespoons fish sauce
- 1 tablespoon brown sugar or palm sugar
- 1 tablespoon lime juice
- 1 tablespoon vegetable oil
- 1 teaspoon ground black pepper
- 1 lb (450g) boneless, skinless chicken thighs or breasts (cut into bite-sized pieces)
- 1 tablespoon vegetable oil (for cooking)
- Fresh cilantro (chopped)
- Lime wedges
- Thinly sliced red chilies (optional)
Instructions:
- Prepare the Marinade:
- In a bowl, combine the minced lemongrass, garlic, grated ginger, soy sauce, fish sauce, brown sugar, lime juice, vegetable oil, and black pepper. Stir well to combine.
- Marinate the Chicken:
- Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, but for best results, marinate for 2-4 hours or overnight.
- Cook the Chicken:
- Heat 1 tablespoon of vegetable oil in a large skillet or grill pan over medium-high heat.
- Add the marinated chicken pieces in a single layer. Cook for about 5-7 minutes per side, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 74°C). Adjust the cooking time based on the thickness of your chicken pieces.
- Serve:
- Transfer the cooked chicken to a serving plate. Garnish with fresh chopped cilantro and lime wedges. If you like a bit of heat, add some thinly sliced red chilies on top.
- Optional:
- Serve the lemongrass chicken with jasmine rice or a fresh salad for a complete meal. You can also add a side of steamed vegetables or pickled vegetables for extra crunch and flavor.
